New Year, New You.. Cose bolle nella nostra pentola? What is in our Pot? The answer is wild boar, this is what we're cooking up in our pots this month. Let's trot to the main event!
The heart of winter leads us to look forward to hale and hearty. We are serving game, wild boar, and my favourite winter vegetable, cavolo nero. Cavolo, italian black cabbage, takes strength from the cold. It's starch turns to sugar with the frost and it looks like a miniature palm tree in the garden, bringing a whisper of summer in paradise to your plate.
Circling back to the start and the snacks, this feast is our chance to properly highlight the beauty of the coast meeting the forest. Sea meets the land on our snack list, but more importantly in the dish of vitello tonnato. Tender, wafer thin slices of veal, delicately paired with a velvety indulgent sauce boasting of a perfect balance of rich tuna, briny anchovies, zesty capers and a hint of lemon. All harmoniously blended into a creamy and flavourful ensemble
This month's cheese offering is another surprise offset with a splash of sweet wine to finish.
Bodega and Chad Christian have teamed up to curate this evening's wine pairing, available as a supplement for £20 per person.
